Outfitting a new winery cellar is one of the most consequential infrastructure decisions you'll make. The choices you make now — about layout, rack systems, flooring, and equipment — will shape your operation's efficiency, safety, and capacity for the next 20 to 30 years. Get it right and your cellar becomes a competitive advantage. Get it wrong and you're working around the consequences for decades.

Step 1: Determine Your Production Goals

Before anything touches a floor plan, you need clear numbers: how many barrels do you intend to store at peak capacity, not just at launch? Most wineries underestimate growth and run out of cellar space within 5 years of opening.

A useful exercise: project your barrel count at 3x your current production. Does your planned cellar still accommodate that volume? If not, either expand the facility plan now or invest in a rack system that maximizes density within the available footprint, so you can grow into the space you have.

Step 2: Map Your Space Before Buying Anything

Draw your cellar to scale — or commission a CAD drawing if the space is complex. Mark every fixed element: structural columns, floor drains, doors and their swing clearances, HVAC equipment, electrical panels, and any windows. These constrain your usable floor area and must be accounted for before you can meaningfully evaluate rack configurations.

Pay attention to ceiling height. Many wineries underutilize vertical space because they spec a rack system without considering how high their ceiling actually allows them to go safely.

Step 3: Choose Your Rack System

Your rack system is the most important infrastructure decision in your cellar. It determines barrel density, safety at height, equipment access requirements, and how your cellar will look to visiting customers and press.

A general principle: one main access aisle wide enough for full forklift operation, with secondary aisles between rack rows sized to the minimum required for your specific equipment. Every foot of unnecessary aisle width is a foot of rack space you're leaving empty.

Step 5: Address Flooring

Cellar floors take a beating. Spilled wine, regular hosing, forklift traffic, and the constant movement of 600-pound barrels all demand a surface that's durable, non-slip, and easy to sanitize.

Sealed or epoxy-coated concrete is the industry standard. Confirm that your floor finish is rated for forklift axle loads — many light epoxy coatings aren't. Ensure drains are positioned at the low point of each aisle for complete drainage, and that rack feet won't span or obstruct drain channels.

Step 6: Temperature and Humidity Control

Target cellar temperature depends on your aging goals, but most production wineries aim for 55–60°F with humidity in the 60–80% range to minimize evaporation. Understand your cellar's natural temperature gradient (cooler near the floor, warmer at ceiling height) and map your wine lots accordingly — longer-aging reserves to cooler, lower rows; wines with faster turnaround to upper, warmer positions.

Step 7: Plan for Tasting and Tour Experiences

If your facility includes barrel tastings or cellar tours, decide now which area will serve that function — and outfit it differently from your production storage. A rotating barrel rack in a tasting area keeps select barrels accessible and visually impressive without occupying production floor space. Designate a clear boundary between production and visitor areas for both safety and regulatory compliance.

Step 8: Think About Phase 2 Before You Build Phase 1

The single most common cellar planning mistake is designing a system that can't be expanded without starting over. Before finalizing your rack layout, ask: if I need to add 20% more capacity in year 5, how does that happen? Can rack rows be extended? Can I add height to existing racks? Can I expand into an adjacent space without disrupting production?
